Shrimp wontons
Wonton, is a southern (Cantonese) style food. Wonton is different from dumpling. Firstly, the shapes of wraps are different. We use square wraps for making wontons but using round wraps for making dumplings. Secondly, wontons always go with soup, but people usually eat dumpling without soup or even sometimes they fry or steam dumplings. Lastly, wontons usually have one shape but dumplings have many different shapes.
Because it is usually hot and humid in the southern China, local people like to have soup before/after their meals. Wonton soup is then a nice combination of meal and soup. The key elements of making tasty wonton soup are the wonton filling and the soup of course.
The filling.
Usually the filling contains pork and shrimp. People in China prefer making their own ground pork because it is much more tender than machine ground pork and we have control over the meat we use. "Grinding meat reduces the size of muscle fibers and connective tissue, making meat easier to chew, and releases sticky proteins, which hep to bind the meat together." -- <the Science of Good Cooking>
The soup.
Chicken soup is the best. Only chicken (chicken meat with skin or bones are the best, e.g., thighs or whole chicken) and ginger slices.
Two main seasonings
Sesame oil and diced green onion. I call sesame oil the "magic oil". It can always make the soup smell and taste way much better. Green onion also serves the same purpose of sesame oil -- tasty food!
To make shrimp wontons, you will need the following ingredients:
Filling:
ground pork made from two pork ribs
ground shrimp made from 30 raw shrimps
2 tbsp sesame oil
1 tsp white pepper powder
1 1/2 tbsp vegetable oil
4 tbsp soy sauce
3 tsp salt
Chicken Soup for each bowl
green onion
1 tsp sesame oil

Coming up: Shrimp wantons
When I was little, my father always told me that I will be very smart if I eat more seafood like fish and shrimp. Plus I grew up on an island, seafood therefore became my favorite meat. The shrimp wanton that I am going to teach you about, is a product of combination of the tender filling of shrimp dumplings from Dim Sum and the moistness of wantons. Get yourself ready for this tasty dish :)

Steamed pork ribs
You will need the following ingredients:
Pork ribs
Salt: 1 tsp
Soy sauce: 5-6 tbsp
Ginger slices: 1/2 cup
Diced green onion: 1/2 cup
Fermented soy bean (optional): 2 tbsp (you can get this from asian grocery store)
White pepper powder: 2 tsp
Vegetable oil: 2 tbsp
Enjoy! :)

Lovely Lemon Curd
I should have posted this recipe a little bit earlier because it is really tasty. I found this recipe around Chinese New Year, a time of the year when I usually eat a lot. The refreshing flavor and taste of lemon is just perfect to help me feel better after a big meal.
Ingredients:
2 Cups of fresh lemon juice (about 2 lemons)
fresh lemon zest (about 2 lemons)
3/4 cup of sugar
5 tbsps unsalted butter
Ok, lemon desert lovers, if you do love any desert with lemon flavor, this is definitely a must-try easy recipe. No baking. Just easy and time saving :)
You can put this lemon curd on any pastry you like, such as bread, toast, and puff shell. Or, you can just simply enjoy this curd alone.
